Chitosan Coating on Shelf Life of Pineapple cv. Poo-lae

Physical and biochemical changes in ‘Poo-lae’ pineapple coated with chitosan during storage at various temperatures were evaluated. Chitosan coating could prolong shelf life, and delayed weight loss, respiration rate, reduction of total vitamin C and total acidity better than uncoated pineapple. Furthermore, pineapple was kept at 8°C showed the longest shelf life follow by 15°C and ambient air. However, pineapple coated with 2% chitosan and stored at 8°C showed the longest shelf life of 21 days, while uncoated pineapple at ambient air had the shelf life of 6 days.
