Studies on sensory evaluation and quality of pear fruits in Emilia-Romagna

Pear cultivars and selections known for their tolerance to fire-blight were subjected to tests aimed to determine their sensorial traits and to evaluate their possibility to be introduced in culture in Emilia-Romagna. Sensorial tests were performed o­n visual and eating traits. Pear assessors were selected and trained for performing panel-test evaluation of fruits of standard and new cultivars to determine traits related to acceptance and quality.
