บทคัดย่อ

Chitosan coating delays ripening of Cavendish banana   Effect of chitosan coating o­n the ripening of Cavendish banana (Musa AAA) during storage at 13°C, 85-90% RH were studied. A 1.0%, 1.5% and 2.0^ chitosan delayed banana ripening by 5, 8 and 9.5 days longer than the uncoated banana. After 10 days storage, the percentage of carbon dioxide in the coated banana increased to 7.8% while oxygen decreased to 13.7%. The chitosan treatments delayed the climacteric peak of respiration, ethylene production, starch degradation and sugar accumulation. In addition the chitosan coating delayed peel degreening and changing of pulp texture. Banana coated with 1.5% and 2.0% chitosan had significantly longer storage life.
