Transport technology for fresh produce: improving your cold chain through knowledge of transport systems Cold chain management is a key player in the maintenance of quality during export of horticultural products. The design of a supply chain must encompass storage temperatures and atmospheres tailored for each variety transported and an understanding of the effect of these parameters o­n the product shelf life.

In recent years, the Supply Chain Innovation group has undertaken a number of intensive temperature surveys of refrigerated shipping containers, vessels and refrigerated trucks to ascertain the variability within the produce load in order to guide export industries o­n heuristics to minimize undesirable quality outturns. This paper discusses practical cases compiled in the past years. Tools such as mathematical modeling to simulate fruit firmness with varying transport temperatures are also discussed.
