Fruit ripening as affected by storage temperature in white sapote (Casimiroa edulis Llave and Lex.).

Changes in respiration and ethylene production in C. edulis cv. Yellow fruits stored at 1, 5, 10, 15, 20, 25, 30, and 35 deg C were studied. The respiration peaked on the fourth day after storage at 35 deg C and on the sixth day after storage at 15, 20, 25, and 30 deg C. Fruits stored below 10 deg C did not show a distinct respiration peak. No ethylene production and a low respiration rate were induced during storage at 1 deg C. Browning of fruit peel was observed at 15 deg C and >30 deg C, while browning did not occur at 10-25 deg C. At 5 deg C, softening was observed only in fruit surfaces. Fruits that had been stored at 1 deg C for 10, 20, 46, and 63 days ripened when transferred to 25 deg C. The period required to attain the peak of respiration and ethylene production decreased as the storage period increased; however, the optimum storage period at 1 deg C was 46 days because chilling injuries were noted in fruits stored for 63 days.
