Effects of cold shock treatment on softening of postharvest banana and some related enzymes activities.

The effects of cold shock treatment on softening of postharvest 'Baxi' bananas were investigated. Treatment with -2-0 deg C cold air for 2.5 h significantly delayed fruit softening of bananas. Cold shock treatment inhibited the activities of polygalacturonase and amylase, and delayed the degradations of pectin and starch which resulted in a delay in fruit softening and maintenance of fruit firmness. However, cold shock treatment did not affect the pectinesterase activity which decreased gradually during fruit softening.
