Effect of wax on postharvesting of yellow passion fruit.

The marketing value of yellow passion fruits is lost due to intense postharvest shrivelling. The effect of postharvest application of 18-21% carnauba wax by successive immersion of fresh fruits was studied. Several parameters such as pulp fermentation and consumer acceptability were evaluated. Fruits were picked when 80 to 100% of the skin was yellow. After selection, washing and disinfestation, fruits were immersed 1-3 times in water or wax and then stored for 25 days under ambient conditions. Successive immersions in wax reduced fresh weight loss and the wilting index. Three immersions in wax retarded the fruit spoiling process. The production of ethanol in the fruit increased during storage, but was not affected by the number of immersions. The ethanol presence was not noticed in sensorial analysis.
