Refrigerated storage of heat-treated strawberry fruit.

The effects of heat treatments and refrigerated storage on the physiology and quality of strawberry cv. Selva fruits were investigated. Fruits were put in an oven at 45 deg C for 3 h. Control and treated fruits were stored at 0 deg C for 0, 7 and 14 days and then at 20 deg C for 48 h. Heat treatment delayed superficial colour development and anthocyanin synthesis, and reduced fruit titratable acidity, but did not modify total sugar content. Heat treatment delayed softening, and retarded respiration and electrolyte leakage at 20 deg C.
