Modified atmosphere packaging preserves sensorial and nutritional quality of Zizyphus jujuba Mill. cv. Li.

Jujube (Z. jujuba cv. Li) fruits were stored at 12 deg C in air and in modified atmosphere packaging (MAP) using 2 types of films. The films used had non-selective (NSPF) or selective permeability (SPF). Control fruits were kept at 20 deg C, with a relative humidity of 90%. After a storage of 19 days at 20 deg C, the fruits were totally inedible. The use of a low non-chilling temperature allowed another week of storage in air: more than 30 days in SPF and triple the period of storage for NSPF. Fruits stored in NSPF, weight loss was minimum up to 70 days of storage, and the value of brix was maintained and acidity slightly increased. MAP was suitable for slowing down the reduction of ascorbic acid content and for extending the nutritional quality of the fruits.
