Studies on storage behaviour of kokum (Garcinia indica choisy) fruits under different storage conditions.

The storage behaviour of G. indica fruits under ambient (13.15-32.5 deg C and 66.5% RH), cold chamber (14.30 deg C and 96% RH) or cold storage (10 deg C and 96% RH) conditions was studied. The physiological weight loss, and the total soluble solid (TSS) and sugar contents, increased throughout the storage period irrespective of the storage condition. A sharp increase in physiological weight loss was observed in fruits stored at ambient conditions, while the increase was slow in fruits under cold storage conditions. The highest TSS and sugar (reducing and total) contents were recorded for fruits stored at ambient temperature. The acidity and ascorbic acid level continuously declined throughout the storage period, with the highest decline observed in fruits stored at ambient temperature. Fruits

under cold storage conditions had the longest shelf life (16 days).
