Postharvest colour changes in cauliflower (Brassica oleracea var. botrytis) Curd.

An autumn-winter crop of cauliflower grown in the Campo of Catagena (SE of Spain) and destined for export was analysed to ascertain postharvest changes in colour. In addition, some other commercial characteristics of quality which, although not directly connected with colour are equally important for market-driven export purposes, were analysed. The various cultivars analysed, i.e. Ravella, Whitney, Malimba, Cabrera, Fargo and Diplomat, were picked in temperatures between 10 and 14 deg C and stored in two types of condition to ascertain their effect on colour and the maturation process. Some cauliflowers were stored in warehouse conditions with an average temperature of 12 deg C and average relative humidity of 60%, while others were stored in a cold chamber at a constant temperature of 4 deg C and 85% of relative humidity. The results point to a difference in behaviour between cultivars, although all kept better in the cold chamber than in the warehouse even though the temperature of the latter installation was not very high.
