Postharvest management techniques for dessert grapes in California.

A major cause of deterioration in dessert grapes after harvest is water loss, leading to darkening of the stem of the bunch and withering of the berries. To prevent water loss, fruits should be air-cooled as soon as possible after picking. Grey mould, caused by Botrytis cinerea may appear during cold storage and fruit must be carefully monitored. Early crops are packed in corrugated cardboard since cold storage time is short. Later cultivars, which spend longer in cold store, are increasingly packed in polystyrene or wood. After packing and stacking on pallets, the crop is placed in cold store where it is treated with SO2 as air is forced in to lower the temperature. To combat grey mould, the sulphur treatments are repeated every 7 to 10 days.
