บทคัดย่อ

Finite element analysis of mechanical damage in chicory (Cichorium intybus L.).

To validate the hypothesis that mechanical damage may induce red discoloration in chicory leaves, individual leaves were stored under constant mechanical pressure at ambient conditions and assessed on days 4, 10, 15 and 22. Results showed that red discoloration was induced by applying mechanical loads on leaves.
