Postharvest alterations of Echinacea purpurea herb.

A study was conducted to identify the main alterations in Echinacea purpurea following its harvest and period of cold storage. The results revealed that while no significant change in the concentration of cichoric acid was observed during storage, the concentration of alkylamides PID 8/9 changed significantly with storage time. Although the concentration of cichoric acid exhibited a high variability, an increasing trend was detected during the first few days of the experiment, with the concentration after 4 days of storage being 29% higher than the beginning. At harvest, aerobic plate count was 2x105/g and showed a one-log increase after 2 days of storage. Moisture loss accounted for a 9% mass loss over the storage period.
