Physical treatments as replacements for postharvest chemical treatments.

Physical treatments have been developed to control postharvest insect and fungal damage. The treatments include temperature and atmosphere manipulation, and combinations of the two. They can eliminate the pathogen or insect present at time of treatment, but do not generally prevent reinfection. However, physical treatments may initiate defence reactions in the fruit or vegetable which will limit subsequent fungal attack. In addition, physical treatments, unlike chemicals, can enhance commodity quality by slowing ripening and senescence and preventing storage disorders. The major drawback is that physical treatments must be tailored to each commodity so as to prevent stress damage. This will limit their usage to cases where no chemical treatment is either available or allowed.
