Evaluation of quality parameters in strawberry during cultivation and postharvest processes.

A rapid and reliable method was developed to characterize the effects of storage and postharvest treatments on the aroma profiles of various strawberry cultivars, using headspace solid phase microextraction (SPME)-GC technique. Fully-ripe fruits of 7 strawberry cultivars, namely Tamar, Malach, Oso Grande, Kamarosa, Charlie, Bella and Yael, picked in a commercial field in the central region of Israel, were used. Although SPME may discriminate low-volatile compounds in the analyte to a certain extent, all valuable aroma substances of the investigated strawberry cultivars were characterized with high accuracy and reproducibility. The 6 examined cultivars could be distinguished on the basis of their distinctive aroma patterns. Several postharvest techniques were applied to improve the storage and shipping conditions. A discrimination plot of all analysed samples showed clearly separated clusters only for the 3 cultivars (Yael, Tamar and Bella). In comparison to these, the cluster distances of samples relating to individual postharvest treatments were significantly shorter. Generally, the described SPME-GC method with subsequent chemometric interpretation of the received GC profiles is very useful in breeding research and for the rapid evaluation of gene bank material. It can be also used to identify the ripening stage and to characterize the effects of cultivation and postharvest processes.
