Postharvest characterization of 'Baianinha' oranges stored in cold storage or under ambient conditions.

Oranges (cv. Baianinha), harvested in Sao Paulo, Brazil, were stored for 15 days under ambient conditions (21 deg C, 60% RH) or in cold storage (1 deg C, 85% RH). During storage, ascorbic acid decreased by 20% and 8%, titratable acidity decreased by 14% and 8%, and the deg Brix:titratable acidity ratio increased by 30% and 18%, under ambient conditions and in cold storage, respectively.
