Loss of firmness of the pulp of fruits of apples (Malus domestica Borkh) cv. Royal Gala stored under refrigeration and in controlled atmospheres.

Apple cv. Royal Gala fruits were stored under refrigeration (AR) in an atmosphere of 20.8 kPa O2 + <0.2 kPa CO2 or in controlled atmosphere (CA) chambers at 0.5 plus or minus 0.2 deg C and 96 plus or minus 2% RH in atmospheres of 2 kPa O2 + 3 kPa CO2 (CA 2/3), 1 kPa O2 + 1 kPa CO2 (CA 1/1), 1 kPa O2 + 3 kPa CO2 (CA 1/3) or CA 1/3 with ethylene absorption (CA 1/3 + BE). CA treatments delayed the softening of apples, with less solubilization of pectic substances and a lower net loss of neutral sugars of the cell wall, particularly arabinose and galactose after 6 months of storage. CA storage did not affect the concentrations of total pectin in the pulp of the apples. CA storage of apples cv. Royal Gala is possible for up to 8 months and AR storage for up to 6 months without deterioration in fruit quality. CA 1/3 + BE is recommended for prolonging post-harvest life.
