Accumulation of hydroxycoumarins during post-harvest deterioration of tuberous roots of cassava (Manihot esculenta Crantz).

Tubers of 7 cassava cultivars with different susceptibilities to post-harvest physiological deterioration (PPD) were cut transversely into 2-cm thick slices and stored for 7 days in the dark at 29 deg C and 80-90% RH. Contents of scopolin, scopoletin and esculetin increased during the first 1-2 days of storage, then decreased fairly rapidly. Esculin content did not increase much. The cultivars with low susceptibility to PPD showed a second large accumulation of scopoletin after 5-6 days storage. Scopoletin was metabolized by peroxidase to an insoluble coloured compound.
