Effect of differentiated nitrogen fertilization on changes of certain compounds in stored carrot roots.

A field experiment was conducted in Poland during 1994-95 to evaluate the effect of fertilization with reduced N forms (ammonium sulfate and urea), applied by broadcast and placement techniques, on the postharvest changes of certain compounds in roots of carrot cultivars Joba and Flacoro. In the broadcast fertilization treatments, ammonium sulfate and urea were applied to the soil before sowing the carrot seeds while in placement fertilization, both were applied in every second row at a 10 cm depth, either presowing or at the 3- to 4-leaf stage. The harvested roots were stored at 2-3 deg C and 90-95% RH for 164 (25 September-7 March) and 160 (27 September-5 March) days in 1994-95 and 1995-96, respectively. Tabulated data on changes of fresh matter in stored roots (%) and on the nitrate, soluble sugar, phenol and carotenoid content in freshly harvested and stored roots are presented. Nitrate and soluble sugar contents decreased and phenol content increased during storage. Urea placement fertiliza

tion at the 3- to 4-leaf stage resulted in the lowest nitrate contents. Joba roots had higher carotenoid contents than Flacoro roots and carotenoid content increased in Joba roots and decreased in some samples of Flacoro roots during storage.
