Effect of linear drying shrinkages and shapes of solid bodies on their drying kinetics.

The kinetics of vegetable convection drying is assessed. Non-linear changes of moisture content (dry basis) during the drying period result from the shrinking of dried particles. A non-linear mathematical model is presented which includes the N-coefficient, the value which depends on superficial shrinkage of dried particles. The method for determining N-coefficients is described and the model of this coefficient is formulated. The model was empirically verified for slices of red beetroots.
