บทคัดย่อ

Post-harvest quality in Agaricus bisporus: changes in gene expression.

Continued development and subsequent loss of quality of harvested mushrooms results in significant losses. Through the use of differential screening technology we have identified changes which occur in mushrooms during postharvest storage (2 days at 18 deg C). Nineteen genes/gene families exhibit increased expression following harvest and storage for 48 h; the functions of 10 were elucidated. The data provide a valuable resource for the molecular study of developmental processes in harvested mushrooms, and highlight how postharvest biology in fruiting bodies is regulated.
