Openly selling the "health" aspects.

The article seeks to establish areas in which horticultural products may be sold to the consumer with regard to health rather than just the necessity of food for survival. This is against a background of increasing consumer concern for the quality and health of food. The first section following the introduction lists the wide range of products that fall under the horticultural label and are therefore relevant to the research. The second section looks at the role of the mass media in allegedly distorting the facts concerning food health, alarming consumers and damaging the interests of horticulturalists unnecessarily. The third section focuses on the qualitative aspects of fruit and vegetables that might be emphasised in a postharvest situation, such as freshness and vitamin content, which are still largely preserved through freezing, though to a lesser extent when fruit and vegetables are stored in oil, vinegar or brine. Section four considers the nutritional aspects, while section five stresses

 the human health benefits in respect of heart disease, cancer and ageing. Section six focuses on the action of various vitamins on the body and its functions, while section seven considers the action of mineral salts and their impact on vitamins. The final section sums up tips for healthy eating.
