Postharvest market quality preferences for fruit and vegetables.

Information is provided on factors which determine the price levels for apples, pears and other horticultural produce. Quality aspects of fruits and vegetables favoured by consumers are listed and tabulated and the need to adapt postharvest technologies to meet traders and consumers requirements, shelf-life expectations and the marketing structure is outlined.
