บทคัดย่อ

Postharvest development of the common mushroom (Agaricus bisporus).

Development of the mushroom strain U1 continues during postharvest storage. Data show that the onset of this development is dependent on, as well the initial size at the time of harvest, as on the time of harvest itself and the involvement of plant growth regulators. Postharvest development comprises a drastic rearrangement at the cellular level. The high respiration values found during this process can be partly explained by synthesis of high-energy polyphosphates in the gill tissue. 13C-NMR measurements are made showing all changes in soluble carbohydrates in the mushroom during postharvest development.
