Postharvest physiology and secondary metabolism.

The metabolic activity of harvested plant organs differs depending on species or even cultivars. From the date of harvesting senescence starts. Nevertheless secondary metabolic activity exists besides catabolic processes. This is explained for some typical metabolic changes during the postharvest period such as plant pigment changes (biosynthesis of lycopene and breakdown of chlorophyll) and browning reactions (biosynthesis of phenolic substances). Postharvest secondary metabolism is influenced by exogenous factors such as temperature or storage atmosphere, and ethylene as the main endogenous factor. Some postharvest changes of secondary metabolism can be described by regulation of specific genetic activities.
