Post-harvest management of the potato.

 

The article addresses the question of conserving potato stocks after harvesting. Much depends on the state of maturity of the crop: immature potatoes have a thinner skin and thinner cell walls, increasing the possibility of damage. Choosing the best time to wash the crop, which is usually dictated by the imminence of conveying it to market, is another element in quality control, since while the potatoes are made more attractive to the consumer, washing also makes them more susceptible to deterioration, loss and price increases: the average storage life of 3040 days in perfect conditions reduces to 715 once the potato has been washed. In addition, after harvesting, there are losses in processing, transport, selling etc. The remedy is a more systematic concentration on achieving ideal conditions for production, grading and packing, storage, etc. The natural development of the crop in the soil from seed is also discussed, as are the physiological disturbances which the crop can undergo, such as gre
