Water potential and failure parameters of apple flesh during storage.

Apple (cv. Gloster, Jonagold and Idared) fruits harvested in October were stored at 4 deg C and sampled in January, February and March on removal from storage and after 4 and 8 days at 20 deg C. Compression tests were carried out on cylindrical samples of fruit flesh and relationships between water potential, compression tests and fruit quality were determined. The water potential of fruits decreased with duration of storage and decreased during shelf life and was the most suitable parameter for use as an indicator of the physical state of apple fruits during storage.
