บทคัดย่อ

Modelling the firmness of 'Elstar' apples during storage and transport.

The development of a dynamic model which describes the decrease in firmness of Elstar apples under different conditions, based on general knowledge of how firmness is affected by chemical and biochemical reactions and on the strict and consistent application of fundamental kinetics, is outlined. Factors affecting firmness include pectic compounds in the middle lamellae of the fruit, respiration rate, enzyme activity and temperature. The model can be applied to predict the final firmness (on reaching the consumer) of Elstar apples at various stages.
