A prediction model for superficial scald development on Granny Smith apples after cold storage.

Fruit maturity indicators, skin macroelements and hexane skin extracts of Granny Smith apples from 4 areas in the Western Cape region of South Africa were recorded at harvest over 3 harvesting dates for 4 consecutive years (1993-1996). The variables were analysed for significant correlation with superficial scald incidence assessed after 4 months of cold storage. Starch conversion as maturity index and alpha -farnesene, conjugated triene hydroperoxides and optical density at 200 nm (antioxidant activity) in hexane extracts correlated significantly with superficial scald incidence, but with some variation between the harvest areas. Mg and K were the only macroelements that showed some association with superficial scald. Accumulative preharvest temperature units recorded in the field, and days from full bloom to harvest were also analysed and good associations with superficial scald were found. Stepwise regression analyses were used to generate superficial scald prediction models.
