Effect of Semperfresh on postharvest behavior of cucumber (Cucumis sativus L.) and summer squash (Cucurbita pepo L.) fruits.

Semperfresh (containing sucrose esters) was applied to washed cucumber and summer squash fruits by dipping at 0.8% or 1.0% doses, and allowed to dry at room temperature. Storage experiments were carried out at 12 deg C and 90-95% RH in a cold room. Respiration rates and external quality of fruits were also studied during shelf life at 20 deg C. Results for 2 cucumber cultivars (Niz 760 and Hana) and one summer squash cultivar (Arlica) were nearly similar. Semperfresh did not retard water loss during storage in summer squash or cucumber cv. Niz 760. However, 1.0% Semperfresh did reduce water loss of cucumber cv. Hana. Semperfresh applications significantly reduced respiration rates of fruits. Moreover, coated fruits had greener skin colour than non-coated fruits. Especially reduced rates of respiration and chlorophyll degradation were evident with the 1.0% Semperfresh treatment. Variations in external quality between coated and non-coated fruits were visually important. Semperfresh-coated fruits

had more marketable characteristics, viz. slower colour change, decreased respiration rate and slow softening. It was concluded that Semperfresh can be beneficial for cucumbers and summer squash at a 1% dose for limited storage and shelf life.
