How to avoid mould troubles in green coffee preparation.

A study was conducted in Brazil to determine the measures which could be taken during coffee cultivation to reduce the risks of mould development during coffee processing. This indicated that particular care during the postharvest phase was most important. Prolonged conditions of high humidity during coffee drying should be avoided and cherries, parchment and green beans should not become wet again during storage and transport.
