Effect of chemical treatments on the post-harvest losses of Perlette grapes.

In a study in 1994, grapes cv. Perlette at the fully ripe stage were harvested and packed in cardboard boxes (2 kg fruit) with potassium metabisulphite (KMS) and/or sodium thiosulfate (STS) each at 2, 4 and 6 g using paper lining as a cushioning material. The chemicals were packed in typing paper and kept in the middle of the boxes. Boxes were held at room temperature. The treatments with 4 g KMS + 2 g STS, 4 g STS and 2 g KMS + 4 g STS were most effective in reducing physiological weight loss over the 8 days of the study. Treatments with 4 g STS and 4 g KMS + 2 g STS were also effective in reducing the losses due to decay in comparison with the control and other treatments. Effects on TSS and acidity are discussed.
