Postharvest quality of strawberries.

The postharvest quality of fruits of the strawberry cultivars Jonsok and Senga Sengana from a commercial farm in Finland was studied in 1995. Fruits were picked when ripe and at 3/4 ripeness and stored at 2 or 5 deg C. Nutritional and sensory qualities were determined during 4 days' storage. Vitamin C [ascorbic acid] and sugar contents in ripe and 3/4 ripe fruits were retained well during storage. The incidence of mouldy and bruised fruits was greater when they were harvested ripe compared with 3/4 ripe, and was also higher for those stored at the higher temperature. The sensory quality of 3/4 ripe fruits improved during storage while that of ripe fruits either remained the same or deteriorated. Flavour and overall quality of both ripe and 3/4 ripe fruits was acceptable after 4 days' storage at both temperatures.
