Storage of kaki (Diospyros kaki L.), cv. Fuyu, in modified and controlled atmosphere storage.

Persimmon (cv. Fuyu) fruits were stored in controlled atmosphere (CA) storage or in modified atmosphere (MA) storage at -0.5 deg C and 96% RH for 100 days and then held for 4 days under simulated shelf-life conditions (14 deg C). The CA-stored fruits were held in 15 kPa O2/15 kPa CO2 or 2 kPa O2/9 kPa CO2, the latter with or without ethylene absorption. The MA-stored fruits were packed in microperforated polyethylene film (40 micro m), with or without ethylene absorption (sachets of potassium permanganate inside the packaging) and with or without postharvest dipping in iprodione (150 g a.i./100 litres). The partial pressure of O2/CO2 inside the packaging was 11.5 kPa/6.7 kPa. Fruit quality was evaluated on removal from storage and after simulated shelf-life. Fruit firmness was satisfactory in all treatments on removal from storage. CA storage in 15 kPa O2/15 kPa CO2 maintained the highest flesh firmness after 4 days' shelf-life. Fruits from both CA-storage treatments showed the lowest decay (37-

47% of fruits with symptoms of pathogenic decay consisting of lesions >5 mm in diameter) and skin browning incidence after simulated shelf-life. Iprodione treatment reduced decay (from 69% in MA-stored fruits without iprodione treatment to 47%) but caused skin browning. Ethylene absorption reduced skin browning, but did not affect flesh firmness.
