Cold chain applications in fresh fruits and vegetables produced in the GAP (Southeast Anatolia) Region.

The GAP (Southeast Anatolia Project) Region is expected to increase agricultural production and productivity by means of large scale irrigation. An important factor is the storage of the surplus production, as most of the fruits and vegetables are perishable. In order to keep the postharvest losses to a minimum, there is a need to introduce postharvest technologies, such as canning, preserving, freezing, cold storage, drying and use of chemicals. The growing trend throughout the world is for the consumption of fresh fruits and vegetables as close as possible to their natural form. For this reason, cold chain systems are becoming more important. The GAP targets are to increase summer vegetable production from 1.3 million t to 4.5 million t and winter vegetable production from 28 thousand t to 608 thousand t. Cold storage and the cold chain aim to maintain the quality of fruits and vegetables but prevent over maturation and damage due to pests and diseases. In order to prevent the negative effects

of cold on fruits and vegetables, there is also a need for controlled atmosphere storage and modified atmosphere packaging. In order to meet the demand for preservation of the fruits and vegetables in the GAP Region, there is therefore the need for a wide range of investments in terms of cold storage and postharvest technology. This requires a great deal of organization and the development of the necessary infrastructure.
