Post harvest change in excised Piper betle L. leaf: temporal changes in betel types bangla and kapoori.

In experiments carried out in Uttar Pradesh, India, in 1995-96, leaves of bangla and kapoori types were harvested from 2- to 3-year-old vines and stored at room temperature in bamboo baskets with a moist lining. Leaves were shuffled every day and any with signs of rotting were discarded. Changes in chlorophyll, total protein and total water soluble sugar contents, and total dehydrogenase activity, were studied for up to 30 days after excision (DAE). The 2 types differed markedly in rate of leaf senescence. In kapoori, 50% of chlorophyll was lost by 20 DAE, while similar levels were seen in bangla at 30 DAE. Changes in chlorophyll were less marked in the petiole, compared with the leaf. However, with respect to protein, the trends were similar for petiole and leaf. The respiration rate, as expressed by total dehydrogenase activity, was faster in kapoori leaves and petioles compared with bangla; this may be one of the reasons for faster senescence in kapoori.
