Effects of irradiation and drying on volatile components of fresh shiitake (Lentinus edodes Sing).

Fresh shiitake (L. edodes [Lentinula edodes], from Taiwan) was irradiated with doses of 0.5, 1 and 2 kGy using 60Co. Irradiated and non-irradiated shiitakes were dried at 40 deg C for 10 h, 50 deg for 2 h and then 60 deg for 1 h, continuously. Effects of gamma -irradiation and drying on the volatile composition of shiitake were studied by GC and GC-MS. Irradiation above 1.0 kGy inhibited the growth and mould decay of fresh shiitakes after harvesting. Irradiation with 2 kGy increased the 8-carbon volatile components of fresh shiitake. Treatment at 1 kGy irradiation produced some new volatile compounds in the dry product, such as methylethyl disulfide, sulfinylbis methane, methyl(methylthio)ethyl disulfide and N-(3-methylbutyl) acetamide. The 8-carbon compounds mostly disappeared after drying. The amount of sulfur-containing volatile compounds in dried shiitake was reduced by irradiation.
