Postharvest loss of fresh matter and water in okras affected by fruit size and mechanical damage.

Okra (cv. Amarelinho) fruits were picked 5 to 10 days after anthesis when the fruits were 6- to 15-cm long. The fruits were picked by cutting with scissors or by detaching the fruits from the plant by pulling (causing mechanical injury). Fresh weight (FW) and water loss were measured during storage at 25 deg C and 85% RH. The rates of FW loss and water loss were inversely proportional to fruit size. After 5 days' storage, FW loss was 75% greater in 6- to 9-cm long fruits than in 12- to 15-cm long fruits. Mechanical injury increased the rate of FW and water loss in smaller fruits (6- to 9-cm long) but had no effect on larger fruits.
