Effects of long term controlled atmosphere storage on postharvest ripening qualities of tomatoes.

Tomato cv. Criterium fruits were stored in controlled atmosphere conditions for 60 or 70 days at 15 deg C and kept in air for another 10 days for ripening at 20 deg C. The fruits were evaluated for changes in their colour, firmness, acidity, total soluble solids (TSS), weight loss and decay during storage. All tomatoes stored either in 1-3% O2 or 3-9% CO2 kept their green colour for 40-50 days. Tomatoes stored in a low-O2 environment were much more green and slightly firmer than those stored in high-CO2 environments. Acidity levels were similar in all treatments except the fruits stored in 1% O2 or 9% CO2, in which they were significantly lower. TSS values of fruit stored in air (controls) or in 1% O2, particularly after 40 days of storage, were significantly lower than in other treatments. While the greatest deterioration occurred in fruits stored in air or in 1% O2 + 5% CO2, the least occurred in 3% CO2 + 5.5% O2.
