Effect of sulfur dioxide on some physiological and biochemical characters of postharvest grape.

In a storage experiment carried out in 1995, fruits (5 kg) of grape cv. Thompson seedless were fumigated with 100 or 200 litres SO2/litre for 1 h. The activities of superoxide dismutase (SOD), peroxidase (POD) and catalase (CAT) in grain, fruit stalk and spikelet stalk all increased with treatment, but the content of malonaldehyde (MDA) decreased. However, when fruits were treated with 300 litre SO2/litre, the above-mentioned effects were reversed and fruits were bleached. After treatments with 100 and 300 litre SO2/litre, the permeability of cell membranes increased, the rate of membrane damage being lower with the lower concentration (3.3%) than the higher (51.2%). The contents of organic acid, sugar and ascorbic acid in fruits treated with 100 and 200 litres SO2/litre all decreased, more so in the latter treatment than the former, while the contents of some nutrients in fruits treated with 100 litres SO2/litre were still higher than those of controls.
