บทคัดย่อ

Post harvest technology and processing of spices in Indonesia.

As one of the world's major spice producers and exporters Indonesia is constantly trying to improve the quality of its products. Shortage of capital and the relatively low stage of development of postharvest technology make contamination by microorganisms a serious problem. Improved postharvest technology both on farms and in the processing industry is badly needed. Measures to develop appropriate technology, improve hygiene and educate farmers are needed. New technologies such as microwave processing to improve quality should be better used in future. Better collaboration between importing countries and exporters is needed to bring this about.
