Postharvest biochemical and ultrastructural changes in flesh of Chinese jujube fruits during softening.

Postharvest softening of jujube (Zizyphus jujuba [Ziziphus sativa]) fruit flesh coincided with starch degradation, increases in amylase activity and soluble pectin content, and decreases in protopectin content and polygalacturonase (PG) activity. During softening, the middle lamella between the cell wall degenerated and adherent cells separated, but the cell wall remained unchanged. Fruits picked at the half-red stage were capable of reddening; the flesh usually became soft after the whole skin turned red. The change in flesh colour represented the extent of softening.
