Interaction between the package and the packaged product: effects on respiratory and aroma volatiles.

Studies were carried out on the permeability to O2, CO2 and hexylacetate (a primary aroma compound of apple fruits) of low density polyethylene (LDPE) film at temperatures ranging between 0 and 30 deg C. Respiration rates of slices of the browning-resistant apple cultivar NY 674 were determined in LDPE packages designed to generate a wide range of O2 levels. Permeability to hexylacetate did not always increase with temperature in an Arrhenius-type fashion and diffusion coefficients tended to be much lower than for O2 and CO2. A model was developed which incorporates the effect of O2 on the rate of fermentative metabolism, which may relate to off-flavour production. The modelling approach presented can be used to predict O2 levels, hexylacetate levels and fermentative activity as a function of temperature and film thickness.
