Freshness of vegetables: a decisive precondition for sales prospect.

A review of the processes resulting in the loss of freshness in harvested vegetables is presented. Respiratory losses and the minimization of metabolic processes is discussed in relation to the use of cooling to maintain freshness. Constraints on the use of cooling, such as the loss of water vapour from the stored vegetables, and aspects of the design of cold storage which minimize adverse effects are discussed. The integrated management of postharvest stress from harvesting to marketing and distribution is described.
