The physiology of postharvest senescence in Chinese cabbage (Brassica campestris L. ssp. chinensis Makino).

Ethylene production by Chinese cabbages decreased continuously during 5 days postharvest holding at 25 deg C. The superoxide dismutase, catalase and peroxidase activities, ascorbic acid, glutathione, carotenoid, chlorophyll, soluble protein and malondialdehyde contents, and membrane permeability, of both outer and inner blades were studied. Postharvest senescence of Chinese cabbages was accompanied by damage to the lipid peroxidation pathway caused by active oxygen.
