Trends in the food market, supply organization, and postharvest of fruits and vegetables.

The effects of changing lifestyles on consumer demands in the fruit and vegetable food sector are described. Processing and product differentiation can be achieved through the application of resource, operational and organizational innovations. The roles of plant breeding, precision farming and the implementation of quality management systems for responding to customer needs and facilitating access to the more exacting markets are considered. The importance of increased coordination of the production-marketing channel and of geographic diversification are outlined. Research on postharvest aspects of fruits and vegetables has been aimed at preventing losses and extending conservation, by advancing the understanding of produce physiology and devising means for decreasing the rate of natural and pathogenic deterioration. In the emerging context of consumer-driven, vertically coordinated production and marketing, a reconsideration of research objectives, technological developments and postharvest ma

nagement strategies is needed, aiming at product differentiation, identity preservation and complementing organizational innovations. Quality control, analytical techniques and logistic software are suggested as areas for future postharvest research.
