บทคัดย่อ

Potato glycoalkaloids: chemistry, analysis, safety, and plant physiology.

This review presents an integrated and critical assessment of the multifaceted aspects of the role potato glycoalkaloids play in human and animal nutrition and food safety. Chemical analysis of glycoalkaloids, plant physiology (the biosynthesis, glycosylation and distribution of glycoalkaloids), pest resistance, molecular genetics and the factors influencing glycoalkaloid production (such as inheritance and host-plant resistance) are discussed. In addition, the effects of pre-harvest conditions (such as soil composition and climate) and postharvest events (e.g. the effects of light, temperature, storage time, humidity, mechanical injury, sprouting inhibition and processing) on glycoalkaloid content are highlighted. Further research needs are suggested for each of these categories in relation to the minimization of pre- and post-harvest glycoalkaloid synthesis.
