Membrane damage in fruit perhaps the explanation of hollow core and flesh browning.

The symptoms of these pear disorders, which occur in controlled atmosphere storage, are described. The CO2 concentration is the most important factor affecting their incidence, which is increased by low O2 concentrations. The incidence of the disorders is higher in late-picked fruits, and in years when temperatures in August and September are lower than average. The roles of fruit respiration rate, and of enzymes, ethane and antioxidants in the fruit cells are also discussed in relation to cell membrane damage.
