Fruit maturity, carbohydrate and mineral content relationships with watercore in 'Fuji' apples.

Fuji apple fruits were harvested weekly from trees at the Havelock North Research Station, New Zealand, on 9 occasions (between 23 March and 19 May, 1996) during maturation and ripening. Statistical analysis was carried out using harvest date as a covariate to remove the effect of maturity. Internal ethylene concentrations, percentage soluble solids, dry matter, and sorbitol and sucrose concentrations increased with water core severity, and glucose and fructose concentrations decreased with water core severity. Flesh firmness, and starch and calcium concentrations decreased with slight water core incidence but increased with moderate to severe water core.
